Dragon Well Green Tea has a legend behind it…

To make a simple pot of dragon well tea, just follow these steps:

  • Bring water to about 180 F / 80 C, or “the first risings of steam” if you’ve got no thermometer
  • Spoon out a couple of spoonfuls for your pot. The flat leaves make this a mini-challenge
  • Because of its large, flat leaves, this tea really doesn’t work in tea bags. Use a tea infuser, or better yet, a teapot.
  • (I like a glass teapot so I can watch the leaves unflatten)
  • Preheat the teapot with a splash of hot water, then pour it on!
  • 2-3 minutes of steeping.
  • DRINK
  • You can reuse the leaves for a second infusion, especially if you like your company
